Galantine is a cold preparation with a mostly rounded shape, made of tiny meat cubes (either of veal or chicken), ham, tongue and truffles, mixed with a filling and enclosed in a chicken or turkey skin wrap, or in a net of calf. Everything is then boiled and served with jelly.
