5 tbsp grana padano cheese ( or parmesan cheese )
pepper ( to taste )

2 egg whites

Prepare the dough
Separate the yolks from the egg whites of two eggs. Beat the egg whites in a bowl with a pinch of salt and pepper. Add 4-5 tablespoons of cheese, adjust depending on how the compound is: it must be consistent but not too solid.
Create the cheese puffs
Take a piece of absorbent paper and pour on it the flour you need to dust the grana puffs. You can also use a bread bag, or a bowl, or a soup plate. Using a spoon, take small portions from the dough and shape tiny balls. Pass the tiny balls into the flour: all parts must be covered with flour.
Fry the grana puffs
Take a large high-sided pan. Pour into it the oil to fry and warm it up. When the oil is hot enough, cook in it the prepared cheese puffs, turn them on both sides often. Be careful not to burn the oil. Line a tray with absorbent paper. When the grana puffs are ready, lean them on the absorbent paper, and once the excessive oil is removed, serve them.
