Jerusalem artichoke is a herbaceous plant of South American origin, belonging to the Composite family, which grows in the wild and whose edible part is represented by the tuber. This has a very irregular shape, with light brown skin tending to purple and quite firm whitish pulp. Its slightly sweet flavor is somewhat reminiscent of that of the artichoke.
Jerusalem artichoke can be tasted raw (it must be scraped very well), boiled or baked in the oven .
