Lasagna bolognese

A timeless classic of the Italian cuisine, this main course is a real must to prepare on holidays, or simply for a Sunday lunch.

16 oz flour

5 oz spinach ( if you want to make spinach pasta )
4 oz butter
2 cups whole milk
pepper

7 oz ground beef
4 oz pork mince
2 oz pork sausage
1/2 cup white wine
11 oz tomato sauce
extra virgin olive oil

Lasagne are one of the oldest Italian types of pasta. This singular dish is made out of layers alternating pasta sheets with meat sauce and bechamel sauce, but exist many variants, such as lasagna with vegetables, cheeses, spices, etc. Usually, the pasta is boiled, then is assembled with the other ingredients, and then is baked in the oven.

Make the pasta dough

Collect on the pastry board 14 ounces of flour, create a nest with it, add a pinch of salt, 3 eggs, and if you want to make a variant, you can add 5 ounces of boiled and minces spinach to the dough. Knead accurately. Knead the pasta until it will get smooth and firm, then let it rest covered.

Prepare the bechamel sauce

In the meantime, prepare the bechamel sauce: melt 2 ounces of butter, add 2 ounces of flour, mix, and pour the milk little by little. Season with salt, pepper, nutmeg, and cook and stir for 10 minutes.

Prepare the meat sauce

Fry 4 ounces of butter with chopped onion, celery, carrot, and add 2 ounces of chopped bacon. Add the meats minces and the chopped sausage. Pour the wine and let it evaporate, then add the tomato sauce; season with salt, pepper, and continue cooking on low heat for at least 1 hour.

Roll the pasta

Roll the pasta dough in thin sheets slightly floured, and obtain large rectangles, depending on the measure of the baking pan.

Boil the pasta

Boil the pasta, a few at a time, in salted boiling water with a tablespoon of oil.

Make the layers

Butter the baking pan, place 2 sheets of pasta, add a layer of meat sauce, a layer of bechamel, and a sprinkle of parmesan: cover with 2 sheets more, place the layers in the same way, and continue like this until you finish the ingredients. Complete

Complete with the last sheets, and top with the bechamel sauce, the parmesan, and the remaining butter; bake at 360°F for 30 minutes.

Your tasty lasagna is ready

Remove the lasagna bolognese from the oven, and serve.
