Alla mugnaia is the Italian translation of the French definition «à la meunière» which indicates a method of cooking white fish, both whole, filleted or in slices. The fish is lightly floured, cooked in butter and transferred to a hot dish. After that, more butter is melted in a nutty color and poured over the fish, then decorated with lemon slices and sprinkled with chopped parsley.
