Offal

Offal is the term that indicates the entrails and glands of bovine, ovine and caprine animals. Organs that are part of the offal are the liver, spleen, brain, heart, tripe, little soul, tongue, veins, kidney and finally the lung. In domestic birds and game, offal is called giblets.
