Pizzoccheri

Pizzoccheri are a typical pasta of Valtellinese origin in the shape of large noodles, prepared with buckwheat flour and white flour. The traditional recipe calls for them to be cooked together with cabbage and potatoes, seasoned with abundant butter, sage and «scimud», a typical cheese from Valtellina (possibly replaceable with grated parmesan).
