Quartirolo is a cheese produced with whole cow's milk using the same procedure as taleggio. The milk comes from cows fed with quartirola grass (hence the name), that is, of the fourth cut, mown at the beginning of autumn. Once it was prepared in the autumn months, but today it is found all year round. The paste, white and firm, has an almost chalky appearance.
