Razor clam is a bivalve mollusk, which has an elongated shell in the shape of a small and thin tube and, depending on the variety, can be either white-yellow or brown.
This mollusc lives on sandy bottoms, therefore, before cooking it, it is advisable to soak it in salty water for a couple of hours. Razor clams are excellent in soups and au gratin.
