Sea urchin is a mollusk belonging to the Echinoderm family. It is characterized by a spherical armor covered with thick spines that can be long, pointed and very pungent or shorter and thinner depending on the variety. Even its color can change: it goes from dark green to brown, to more or less dark purple, to black, sometimes with white spines at the tip. It lives along the coasts of the Atlantic and the Mediterranean, where it is mainly fished in spring.
Inside the shell there are the ovaries or gonads, which can be orange, red or yellow and make up the edible part.
