Spumone

Spumone is a semifreddo, which is made using specific molds. It consists of ice cream, in the external part, and a cream filling in the core part. Here's its preparation:

  1. Dissolve 100 g of sugar in 300 g of orange juice, leave it to simmer for 5 minutes.
  2. Take 4 egg yolks, 4 tablespoons of sugar and 300 g of cream and mix them. Cook the creamy mixture in a double boiler at low heat and then add it to the orange syrup.
  3. Blend the whipped egg whites with a syrup made with 50 g of sugar and 2 tablespoons of water.
  4. Unite the foam obtained with the previously prepared cream. Put the final result in the freezer and keep it there until it sets.
