The velvety is a soup obtained by passing one or more cooked foods, in order to reduce them into a smooth and, in fact, velvety cream. It can be prepared with both vegetables and shellfish. With the same name, it is also defined as a sauce derived from bechamel, prepared with broth instead of milk.
