Bisque

French word referring to a crustacean cream (generally prawns, but also red lobster, American lobster, and crabs), served as a refined first course. In addition to the main ingredient, the bisque always includes butter, cream and egg yolks, which make it velvety. It is a dish of the great French cuisine.
