Omelette

Omelette is a French preparation which is cooked only on one side, while the other one, the upper part, remains soft and creamy. After the cooking the omelette is folded in half or in three.

Omelettes can be sweet or savoury, served plain, but more often they are stuffed with cheese, jam, ham and many other ingredients ranging from vegetables to shellfish. The "garnish" can also be incorporated during the whisking phase.

Here is its preparation:

  1. Whisk the eggs (2 per person) with salt, pepper, a splash of milk and a tablespoon of grated parmesan.
  2. Pour the eggs into a non-stick pan, making the omelette set on one side and leaving the top creamy. Then place on top the filling you want (for example slices of cheese, ham etc.)
  3. With a wooden spatula, first lift the right flap, then the left flap, bring them towards the center and overlap them.
  4. Cover and cook slowly for a few minutes so that the cheese melts. When cooked, slide it onto a plate.
