Paillard

Paillard is a term that indicates a thin slice of meat cooked on the grill or in a pan, with very little or no seasoning. The name comes from its inventor, the Parisian chef Paillard, who served it in his restaurant at the end of the 19th century.

Originally it was beef, today this preparation is mainly made with veal rump.
