Salsola soda

Salsola soda also called opposite-leaved saltwort. Herbaceous plant with thin and very elongated leaves (similar to chive stalks) which are harvested in spring and sold in bunches. They have a slightly acidic taste and, before being consumed, they must be cleaned of their small root, then well washed, boiled with only the water left over from washing. They are excellent in salads, sautéed with butter and garlic, and sprinkled with grated cheese. Combined with eggs they make a very tasty omelet.
