Also known as Seville orange. It cannot be consumed fresh but is widely used in pastry (it is excellent candied and used in typical regional sweets). In France, where it is known by the name of «bigarade», it is almost always used for the preparation of duck with orange. It is also essential for the preparation of «Marmelade», or English orangejam.
