Diplomat, or diplomatic, cake is a dessert made with many different layers of dough-base (some with puff pastry and others with sponge cake) stuffed with a diplomat cream or rum flavoured with buttercream. The puff pastry forms the base and the top of the cake, while the sponge cake, soaked in maraschino, forms the central part. Diplomat cake is a dessert usually reserved for special occasions.
