Omelette

Omelette is an egg-based preparation, lightly whisked and flavoured with salt, then cooked in a pan, preferably of iron or non-stick material (to allow easier detachment of the omelette from the bottom).

The most suitable condiment would be butter, but a drizzle of oil may also be enough to obtain an excellent omelette with few fats included. After the first part of cooking - during which the mixture should be moved from time to time with a wooden spatula, so that the liquid part remaining on the surface reaches the bottom and becomes firm - the omelette should be turned over with the help of a lid or a plate, which has to be of the same diameter of the pan.

The omelette can be either simple, made with salted eggs and grated cheese, or combined with other ingredients such as vegetables, cheese, meat, pasta and fish.
